I went to On the Border this week.

I wouldn't say fast. It's more of a TGI Friday's for Mexican food. Very Americanized. I had this new thing where you get a quesadilla, an enchilada, a taco, an empinada, a taquito, rice, quac, lettuce and sour cream all on one platter. I couldn't eat it all. It was wonderful.

I'm too lazy to make enchiladas, so I make "enchilada casserole" by layering the tortillas with the filling like a lasagne.

Yup.  But you have to touch them and get your hands goopy, and therein lies some of my issue with it.  Much easier to make a lasagne.

i made garlic,spinich meatballs in merlot tomatoe sauce last night...& mini penne with olives and romano cheese.  yum, yum. made me forget about the goopy hand thing.
