Have to toot my own horn.  Tonight for dinner, I made chicken and cheese quesadillas that are crazy insane good.  But not only did I make quesadillas, I also made the tortillas and the guac (I've got to say, this would give Nishi's a run for the money) from scratch.  Store-bought tortillas and guacamole are far too high in sodium - so I made sodium-free.  All together with the quesadilla filling and sour cream and everything, these ended up being about 85 mg of salt per serving, which is awesome. 

I'm incredibly impressed with myself.

My husband says I should open a restaurant.

Excellent work.  I've yet to attempt tortillas at home, they look labor-intensive, so I'm impressed you did!

They were really easy.  As I said, I made sodium-free, so it was 2 cups of flour, a teaspoon of salt-free baking powder, a tablespoon of shortening and a 1/2 cup of water.  Combine, let the dough rest for like 15 minutes, separate into 8 pieces, roll out and then throw in a dry skillet over medium heat for about a minute or so per side.  The end.

The guacamole is so damn good.  I have some in a little tupperware in the fridge and I so want to just grab a spoon and dig in.

Never.  I'd have no idea how to go about making a tamale.  Do they just sell corn husks and meal or would I have to buy ears of corn and mill them and then use the husks?  Enchiladas, on the other hand, seem doable.

very in depth process. i never made them...just watched the end process and pigged-out.
seems like some one should produce a tamale kit, like the magic taco boxes.

I wouldn't say fast. It's more of a TGI Friday's for Mexican food. Very Americanized. I had this new thing where you get a quesadilla, an enchilada, a taco, an empinada, a taquito, rice, quac, lettuce and sour cream all on one platter. I couldn't eat it all. It was wonderful.

Yup.  But you have to touch them and get your hands goopy, and therein lies some of my issue with it.  Much easier to make a lasagne.

Yup.  But you have to touch them and get your hands goopy, and therein lies some of my issue with it.  Much easier to make a lasagne.

goopy hands comes with the cooking saga to some degree.

i made garlic,spinich meatballs in merlot tomatoe sauce last night...& mini penne with olives and romano cheese.  yum, yum. made me forget about the goopy hand thing.
