Red curry pork

I just want to say I love red curry pork.  YUM!  (eating leftovers now)

I grew up LOATHING anything "curry" because my mom used to make this nasty dish out of boiled cauliflower, mayo and curry powder.  Three of the foods I hate the most.  It was gross.

A few years back, I had the opportunity to meet a chef I really liked and trusted, and he made a red curry pork dish and made me eat it.  *SWOON*

Now I get it whenever I can at restaurants, and am deciphering a good recipe to make at home.  Anybody have one they'd like to share?

I don't believe I've ever had red curry pork.  But if you make it chicken or beef or veggies, it sounds like it has potential.

Thai curries are pretty easy to make. You need the curry paste and some coconut milk and broth and fish sauce and lime juice and sugar. That's about it.

1. cook pork
2. add red curry
3. eat.

I have made my own before. It's very tasty, but it's insanely time-consuming and I don't even know for sure that I did it right.  I have made very tasty homemade pastes though. Just google "philpott thai," that will get you an assload of recipes including paste methods.

I typically just grab a tub of Mae Ploy brand curry paste. Speaking of which, there's supposedly a new chinese store that I've been meaning to check out. And the chef at camp says good things about Chung Wah's expanded selection, which I usually avoid because that store smells like ass.

Yes. http://www.thaifoodandtravel.com/mailmarkets.html lists several mail order sources. If you are shipping within the US it's affordable.
