mmm. I love end-of-the-season huge zukes. I make stuffed zucchini boats.
Slice the zuke in half longways and scrape out the seeds. Bake the halves until they're just tender enough to get some of the flesh out.
In the meantime, brown up some sort of ground meat- I usually use sausage, but since I'm sharing this with a Jewish friend, tonight I also made a half with beef.
Mix the meat with good stuffing mix and grated cheese. I used cheddar and mozzarella tonight. Add the zucchini flesh.
Stuff it all back into the halves, sprinkle with more cheese, bake until the cheese is melty.
mmmm.

I did in my zucchini plant. There was some kind of fly that was attacking it and everything else in the garden, but the zucch and cucumber in particuar... :'( My Tomatoes are still going and the peppers are getting fun. ;D
