Title: Shrimp and Orzo
Post by: dazie on June 26, 2006, 08:10:43 PM
Once upon a time in the CH, I posted a recipe for shrimp and orzo with parmesan cheese and lemon juice.

Did anyone by any chance keep that?  I can't find my copy.

1) Cook orzo.

2) Cook shrimp.

3) Serve.

Easy enough.

Noel.  (Number 6's sister)  But I've asked her for it like 30 times and I lose it every time.  I didn't want to ask her again cuz it's embarassing.

Noel is Number 6's sister?  I had no idea.  What ever happened to Noel, anyway?  She disappeared.  Want me to ask for it for you?

We can make it a sticky topic or put it in the news box....

She got a job that keeps her busy.  Imagine that!!!  She wasn't much on computer stuff anyway.

I'll ask her, then I'll post it and someone will copy it!  That way when I lose it again, someone responsible will have it.

dc should post something about how good that recipe is, and how great I was to embarass myself just so the general populous could have it.

I'm sure monkeys are good eating.  The brains, anyway.  According to Indiana Jones.

freak.

Ursus made this tonight- without a recipe.  Sometimes it's good to be married to a professional cook.  :D

Saute some peeled shrimp with chopped onion, chopped garlic and white wine, when they're pink add some basil and chili flakes, and the juice of a lemon.  You want enough liquid to make a thin sauce.

Boil up orzo, drain and combine with the shrimp mixture.  Add a container of shredded romano cheese.  (the good kind- not the powdered kind)

Best served steaming hot, but it'll be ok the next day too.

I have a rad orzo recipe but you could add pan-fried shrimp to the final product.

1 c orzo
2 c chicken stock
1/2 c grated fresh parmesan (I like parmigiano reggiano or grana padano)
~1/4 c fresh basil
fresh ground pepper
butter for sauteeing

Saute the orzo in a good hunk of butter until it smells toasty and is well sauteed/golden. Add the chicken stock and cook on low heat until it is almost dry. Turn off heat. Splash in a little milk and then add and mix the cheese and basil. Pepper it, mix again, and serve!

I'm pretty sure that's all there is to it. It is really good.

That's why I like orzo- risotto without all the stirring. ;)
