Last night I cooked up two pounds of tilapia filets so I would have food for work for a few days. Right when I took them out of the oven, they were only okay -- a little fishier than usual, actually. But today, after a minute in the microwave, they were way better.
Recipe:
1. Purchase two pounds of smallish tilapia filets at your grocery store or fish market. (This is about 8 filets, the way Publix cuts them.)
2. Preheat oven to 450 degrees.
3. Coat each filet in vegetable oil or butter to help keep it from flaking apart (a big problem with tilapia once it gets cooked).
4. Lay out the filets on a grill frame over an oven-safe dish or pan to collect the oil.
5. Cook 6 minutes. Flip all filets. Cook another 6 minutes.
6. Refrigerate in appropriate tupperware or off-brand containers.
7. Microwave tomorrow for 60 to 90 seconds.
8. Enjoy.
This is fish, right? Two pounds of fish? For one person?

I separated it out into three tupperware containers, and had some of it for dinner last night. I brought one to work today, and the wife can take some if she wants it. She'll probably have one tupperwareful for dinner.
I forgot step 5a: pat the filets a bit to sop off the excess oil.
