Title: Taco-esque casserole

Good for potlucks...

3 cups   leftover taco-seasoned ground beef
1 can     (16 ounces) kidney beans, rinsed and drained
1 cup     shredded monterey jack cheese
2           eggs, lightly beaten
1.5 cup  bisquick or similar
1 cup    sour cream
2 cups   shredded lettuce
1          tomato, diced
1 can    sliced black olives, drained

In a large bowl, combine the taco meat and beans.  Spoon into greased 8 in square baking dish.  Sprinkle with cheese.

In another bowl, combine eggs, milk and biscuit mix until moistened, pour over cheese and meat.

Bake, uncovered at 400 for 20-25 minutes or until lightly browned and a knife inserted near the center comes out clean.

Spread with sour cream.  Top with lettuce, tomato and olives.

I used ground turkey, that I just cooked and seasoned myself.  I substituted black beans for kidney beans, and since I doubled the recipe I also added a can of corn.  I used cheddar jack cheese and added green onions to the toppings.

Actually, it does (minus the sourcream)

Get rid of the tomatoes and olives and I'd tear that up.
