Endhiladas and Modelo Negro beer- ice cold.
I make a chicken enchilada casserole that's similar to that- take cream of chicken soup, add more cooked chicken and some milk, combine with a can of green chilis and some cheese and layer between flour tortillas. Like a lasagne.

I don't like beer, and can't buy it in this county anyway. I do have most of the ingredients for margaritas at home though...

I know, but I just like Lithgow. Plus, I'd get to dance with Kevin Bacon eventually.
Also, despite the rotel and chiles and cilantro, that recipe is REALLY bland. I wasn't terribly impressed.
