10 or 12 medium size Russet potatoes
8 or 10 hard-boiled eggs
1 medium sweet onion
Maybe 2 cups of mayonnaise
1 tbsp. celery seed - adjust to taste
salt to taste
1 tbsp. lemon juice
Boil the potatoes - skin on - until done. Peel while hot, but not so hot you burn your fingers.
Boil the eggs - peel and cool.
Eggs and potatoes can be cooked the previous day and refrigerated after peeling.
Chop onion very fine -- so the pieces don't startle the eater!
Mix the mayo, celery seed, salt, and lemon juice.
Chop potatoes and eggs until pieces are very small. I use the Betty Crocker food chopper, but be careful not to have "mush"!
Combine eggs, potatoes and onion in a large bowl. Add the mayo mix and stir until all ingredients are mixed together. You may have to use your hands..............
Chill, covered, until mealtime.

You forgot the mustard.
My recipe is very similar but I put in enough mustard to give it a yellow color and a little bite. I love to then put it on a big oven safe platter, cut up a Polish Kielbasa and mash it into the top and cover it with slices of cheddar cheese. Bake at 350 until the Kielbasa is sizzling. Yum!
That's exactly what I was thinking, BigDun! Gotta have mustard in the potato salad.

with the celery seed, that is very very similar to my recipe, although mine does have a little mustard. also a little garlic powder. and it uses some seasoned salt along with regular salt. the celery seed is what really makes it. that, and seasoning the potatoes when they're still warm.
oh, and mine has grated carrots and very finely diced green peppers. for extra crunch.

I also put in cut up pickles and a little pickle juice in mine. I use sweet pickles for cold potato salad and dill for hot.

My potato salad is so good that thieves broke into my apt one time and took the time to find a pan of it in the back of my fridge and eat it all. I am sure they could be found at the hospital later that evening since the pan had been in the fridge so long the potato salad had eaten its way through the aluminum.
I quite often put mustard in mine, but ALWAYS celery seed. Yum. Looks like fleas. :)
