I am a big fan of mates halved, cated lightly with olive oil and then sprinkled with coarse salt, oregano, mozzarella and feta. THEN stuck in a broiler until the cheese is melted and a little burned.

Nope. It's usually the quick appetizer I make when I am cooking big time. It takes all of two seconds to half and put stuff on them and it tastes delicious.

I love rich tasting foods that are amazingly quick to make. Tonight I made beef stroganoff, roasted asparagus, and steamed carrots for dinner in less than 30 minutes. That included all the prep, cooking and plating time.

Man, I had some pickled okra once, and it totally totally ruled.

I just made pickled beets and pickled carrots this weekend.

Vinegar, water, oil, spices...  I'm actually going to attempt to CAN this time instead of wussing out and making fridge pickles.

Canning is pretty damn intense. I usually just throw my jars in the oven until they are simmering inside, but still keep them in the fridge.

Man, do I ever have a story of domestic unrest on the beet pickling day. But that's neither here nor there.

I just put 5 jars of jalapenos and mixed jalapeno and green tomato in the pot to process for 10 minutes.  Yay!

AND- I still have a bunch of peppers and stuff left, so I'm going to make more.

I've only ever had boiled peanuts as part of an Indian lentil dish.

Maybe I oughta try boiling some of the raw ones I got at the chinese grocery...

I don't think you understand the level of salt DS is talking about. Add enough salt so you say "I think I put in too much salt." Then add more.

Boiled peanuts are great!
