Bacon wrapped pork tenderloin with orange-hoisin pan sauce.
Chickpea Ragout
Asparagus and Shallots sauteed in oil and butter with salt and pepper. 

Over all a very successful evening.  nesh was very tired when she got home, so I had to multitask three different dishes at the same time!  As well, this is the first time I've ever made a pan sauce!  I was very excited to do so.

Are you talking about a reduction?

I don't think so.  It's basically deglazing the pan you cooked the pork in to add flavor to the sauce.  I'm not sure if that's called a reduction or not.

Yeah a reduction is when you simmer stuff for a long time to thicken and concentrate it.
