I know it is a mostly southern thing but damn. If you haven't had it, you are seriously missing out.

So rotel dip is just salsa and melted cheese?

Sure, I've had that.

Velveeta is not cheese.

Rotel is not salsa.

Rotel cheese dip is ambrosia.

So it's basically not salsa with not cheese melted over it?

Sure, I've not had that.

Put a crock pot full of this stuff in a room with 12 southerners and nothing is what you will have in about 15 minutes.

Find a McAlister's Deli. That's their "nacho cheese."

The door swings out.  That's why you were having problems leaving.

Sure, I've not had that.

That made me laugh out loud!!

Also if you add a spicey breakfast sausage like Jimmy Dean or some other such southern greasy thing, it adds a whole new dimension to the dip.  To further enhance it, sautee onions and green peppers and cook all of it together for about 30 minutes.  Good eats!

And Nishi is balls on about salsa not being the same as Rotel.

Real salsa has zillions of variations.

My favorite one is homemade:

3 Jalapenos
3/4 of one large white or yellow onion
4 teaspoons of crushed garlic
1/2 of a lime, juice and pulp-no skin
1/2 clump of cilantro-rinsed
2  8oz cans of whole peeled tomatos

Blend in a food processor or blender, add one teaspoon of salt, blend again and enjoy!

I know this topic is just so last Friday, but I just saw it.  Rotel Cheese Dip is awesome.  When I make it I cook Jimmy Dean sausage and put in it, too.  Good stuff.
