They're trying to make homemade fois gras, since it's outlawed in the city limits.  Call it bathtub foie gras.

When I was in San Francisco I went to a place called Aqua that had raw tuna with a medallion-sized hole in it. In the hole was fois gras.

It was one of the most disgusting things I have ever eaten.
