Title: Black Joe Cake

From "The Hershey, Pennsylvania Cookbook:  Fun Treats and Trivia from the Chocolate Capital of the World"

Black Joe Cake (also known as Black Midnight or Black Magic Cake) is a favorite of many families in Hershey and appears in just about every church, school, or community cookbook published in the area.  Named for the brewed coffee that's a key ingredient, it is often complemented by peanut butter icing.  This version and the frosting recipe below come from professional caterer Colette McNitt, co-owner of Events Etc. by the Hershey Pantry in Hershey, Pennsylvania.

2 cups flour
2 cups sugar
3/4 cup cocoa
2 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup oil
1 cup milk
1 cup hot, brewed coffee, black

1.  Mix dry ingredients in a large bowl until thoroughly combined.  Slowly add the wet ingredients, adding the hot coffee last.  Mix until all ingredients are well blended (batter will be thin).
2.  Pour into two greased and floured 10-inch cake pans or one 13 x 9 inch pan.  Bake at 350F for 25 to 35 minutes, until cake tester comes out clean.

I use a big cast iron fry pan instead of cake pans.  It works well, but you do have to cook it longer.

Peanut Butter frosting

2 cups Crisco
3/4 cup margarine, softened
1 cup peanut butter
1 TBS vanilla
1/2 cup milk
2 lbs confectioners sugar

1.  Cream together shortening, margarine, and peanut butter.  Add vanilla.  Add milk alternately with confectioners' sugar.  Beat at high speed for 2 minutes.

Frosts 2 10 inch cake layers or 1 13 x 9 inch sheet cake.

I rarely frost the cake.  It's good by itself.

If it was really from here, it would have scrapple or puddin' in it. 

I think they were serving scrapple at one of the concession booths at the Hershey Bears hockey game tonight.

Duh.  That's why it's so tasty.

And puddin' is the stuff that's not good enough to put in scrapple.
